What is a competitive 25m pistol that will comply with the impending Colorado state weapons ban?

I recommend checking what other states have on their lists. I believe the California one was done (at least initially) with input from USA Shooting:

This is a pretty comprehensive list that includes both .22 & centerfire pistols.
Massachusetts has two target pistols exemption lists:

There are issues with Massachusetts's lists. The Olympic pistol list is ONLY .22 rimfire pistols. The "Formal Target Shooting" list includes some centerfire pistols, but it's incomplete in that it doesn't includes any .32 or .38 Special pistols.
Good luck. I don't know what the Colorado Legisvermin are up to, but a common problem in many states is that they define any pistol with the magazine outside the grip as an "assault weapon", and then ban them on that basis. That's pretty much ALL of the modern 25 meter Olympic pistols.

Remove the Shooting Center from the Olympic Training Center in Colorado Springs. Shame Colorado in front of the nation and world.

I did a quick read of the copy posted on the Colorado state website; it looks about like the other states that have done this.
Two notes I take away, the ban prohibits the transfer of the target items, not possession. It also exempts rimfire (page 11 line 17 of the draft copy).
If you have the ability to acquire what you want now, get it now.

The way they wrote it as "can only fire rimfire ammunition" would still snag pardinis as those have 32 conversions.

I think you're reading something into it that's not there. In laws like the NFA, it says "can be converted..." to get the meaning you are getting at. I would say if this passes, you wouldn't be able to convert a SP to 32 after it goes into effect, but for now you still can.
