Shooting suit name lettering

I would like to put my son's name on the back of his coat and pant leg. Are there rules as to what material you can use for the lettering?

Nope, other than whatever you put on there needs to conform to the same rules as the rest of the jacket with regard to stiffness, thickness, etc.

Be aware that if you're shooting under USA Shooting or ISSF rules, you cannot stitch the two layers together: you'll need to take apart a hem and only stitch the letters to the outer layer of the jacket.
